What delicious food can you taste in Hanzhong?

Hanzhong Rice Noodles

Also known as rice skin noodles, this snack boasts a long history.
In Hanzhong, Chenggu Rice Noodles, Mianxian Hot Rice Noodles and Zongying Rice Noodles represent three distinctive local styles.
The rice noodles taste wonderful for two reasons. First, they are steamed purely from rice milk. Second, the chili oil is made with a special recipe, far more fragrant than chili oil from Sichuan.
Here is the secret: before grinding the chili peppers, people stir-fry them dry in a wok, which makes the chili oil incredibly aromatic.

Recommended Rice Noodle Shops in Hanzhong

  1. Zhang Mingfu Rice Noodles
    Located diagonally opposite the Ancient Hantai Site on East Street. It stays open later than most noodle restaurants. Side dishes include peanut congee, fermented vegetable soup, cold starch sheets, and marinated eggs.
  2. Yipin Piaoxiang Rice Noodles
    Night market stall on Dongmen Bridge, East Street. It offers a wide range of food: rice noodles, cold starch sheets, spicy vermicelli, tofu pudding, lotus root starch and more. The premises are small, but you can easily spot it in summer by the rising steam and outdoor tables.
  3. Jiang Family Rice Noodles
    Down the alley next to North Street Primary School on Tianhan Avenue. The flavour is strong with less soup seasoning.
  4. Zhou Family Spicy Chili Rice Noodles (Zongying Baxiang Branch)
    A household name. The current shop faces the new main gate of Zhongshan Street Primary School. The flagship store will soon relocate to four storefronts north of the new gate of No.4 Hanzhong Middle School on West Street.
  5. Laochengqiang Rice Noodles
    At the intersection of Minzhu Street and West Ring Road. This restaurant was featured in the food documentary Tasting Food Across the Land.

Vegetable Tofu

Also called vegetable tofu porridge, it is a classic Hanzhong snack with a long tradition.
It was once a delicacy for receiving guests and is now popular among ordinary locals.
Soybeans are soaked and ground into slurry, strained to remove residue, and boiled. Fermented vegetable sour soup is added to curdle the liquid. Once solidified, the tofu is pressed into blocks.
For first-time visitors to Hanzhong, pairing a bowl of rice noodles with vegetable tofu is perfect. As the local saying goes:
Rich delicacies may be greasy, but nothing beats Hanzhong vegetable tofu.

Bangbang Noodles

A local Hanzhong specialty. Thin dough is cut into strips 1 to 3 centimetres wide.
The soup is seasoned with soy sauce, vinegar, salt, chili oil, pepper flakes and chopped green onions, finished with a dash of lard.
The name comes from vendors who carried shoulder poles and banged wooden clappers to sell noodles at night.
Features: sour, spicy and fragrant. It warms the stomach. The noodle dish is rich in carbohydrates, plus fat, vitamin B, calcium, phosphorus and iron.
Address: Small street restaurant at the crossing of Lianhu Road and Tuanjie Road.

Shimen Spicy Fish with Broad Bean Paste

This top dish of southern Shaanxi is famous for being freshly cooked live fish. The fish meat is tender, well-seasoned and refreshing. Coated in bright red chili oil, it is moderately spicy without greasiness, leaving a lasting pleasant aftertaste.
Founded by Mr. Rao Shengli, this was the first fish restaurant along the Baohe River. The dish has been covered by CCTV and Shaanxi TV. The restaurant keeps innovating and launching full fish banquets.
"Visit Shimen Scenic Area and enjoy fish by the Baohe River" has become a popular activity for Hanzhong residents.

Chen Sanwa Pickled Ginger Chicken

The creator calls this dish an unrivalled delicacy of Shaanxi.
Chicken is marinated with fresh ginger and small chili peppers then stewed. Both the meat and broth are intensely spicy, making diners break out in sweat.

How to enjoy the dish

  1. Sip the soup: The sour, spicy chicken broth is said to stimulate appetite. Skim off the oil first. The soup is extremely tasty but quite salty, which may be too strong for southern visitors. Still, locals believe no salt means no flavour.
  2. Eat the chicken: The free-range chicken has firm, tasty meat. The spiciness makes you stick out your tongue, yet you cannot stop your chopsticks.
  3. Boil vegetables: Cabbage, wood ear mushrooms and other ingredients are already placed at the bottom of the pot, so no extra dishes are needed.
  4. Staple food: Even ladies cannot resist cooking noodles in this rich spicy broth.
