Local Delicacies of Fuxian Lake
Local specialties include Chengjiang lotus root, over 20 species of fish from Fuxian Lake, and farmhouse braised potato rice. Dining at Mingxing Fish Cave is a must-do during your trip.
Right by the lakeside, a row of restaurants here serves the signature dishes: copper pot fish and braised potato rice. The fish are freshly caught from the lake. Guests pick their fish and have it weighed, then the restaurant simmers it in clear water inside a copper pot. The flesh is tender and totally free of fishy odor. The braised potato rice is slowly cooked in copper pots over fire, which tastes wonderful when paired with homemade pickles.
Copper Pot Fish
A quintessential local dish, it is cooked with fish and water from Fuxian Lake in a traditional copper pot. Only ginger and scallions are added to the plain broth. It is served with a side platter of peanuts, garlic, dried chili peppers stir-fried with sesame oil, plus sour chili paste and fermented bean curd, garnished with coriander and mint. Deep-fried tiny lake shrimps are also served alongside, creating an incredibly appetizing feast.
The kanglang fish is an endemic species of Fuxian Lake and cannot be found in other lakes.
