What Local Specialties Can You Taste in Jiashan?
Steamed Pork Wrapped in Lotus Leaves
Cut streaky pork ribs into chunks and marinate them with soy sauce, sweet bean paste, white sugar, rice wine and other seasonings. Mix the marinated pork with five-spice rice flour thoroughly, wrap each portion with fresh lotus leaves, then steam them in a bamboo steamer. The dish blends the rich aroma of pork and the delicate fragrance of lotus leaves. Characterized by pure, alluring scent, tender texture that holds its shape, and rich meatiness without greasiness, it is deeply beloved by tourists and stands as a renowned traditional delicacy of Jiangnan water towns.
Eight-Treasure Cake
This cake is exquisitely crafted from eight medicinal ingredients — Chinese yam, poria cocos, gorgon fruit, coix seed, malt, hyacinth beans, lotus seed meat and hawthorn berries — blended with premium glutinous rice flour and white sugar. Dark green and crisp, it first gained popularity as a remedy for children’s indigestion. Thanks to its premium raw materials, elaborate production, sweet flavour and stomach-nourishing effects, it has become a famous Jiangnan pastry that has remained popular for over a hundred years.
Yangmiao Pickled Potherb Mustard
Potherb mustard has a long history. It gets its name as it is sown at the Winter Solstice, matures in spring, grows amid snow free of pest damage. This product uses the famous local specialty potherb mustard from the Hangzhou-Jiaxing-Huzhou plain. It is pickled following folk techniques passed down for 500 years, refined with scientific formulas and high-temperature sterilization. It can be eaten raw, stir-fried, boiled into soup, tossed with noodles or mixed into fried rice for diverse culinary uses.
