Shangrao’s local dishes belong to the Gan Cuisine school and form a distinctive branch known as Rao-style cooking. The local palate favours rich, aromatic and bold flavours. Chefs use a wide variety of fresh ingredients, pay strict attention to knife skills and elaborate cooking procedures. Traditional techniques include braising, simmering, stewing, steaming and stir-frying. Dishes are tailored to ingredients, resulting in tastes ranging from light and fresh to crispy, spicy and zesty. Later, culinary styles from Beijing-Tianjin regions as well as Jiangsu and Zhejiang were introduced to Shangrao, gained instant popularity, and have been preserved to this day.

Blanched rice noodles with pork liver, spareribs, mutton or pork intestines are the most popular breakfast foods for local residents. Made from thick, wet rice noodles unique to Shangrao, they are blanched and then boiled, simmered or stir-fried with different seasonings to suit varied tastes.
Highly representative local varieties include Wannian Tribute Rice Noodles (fine-textured, resistant to over-boiling, stretchy and tough) and Guangfeng stir-fried mutton rice noodles.

Lamp Pastry (Dengzhan Guo)
Yanshan’s lamp pastry is an exclusive traditional snack native to Yanshan County, Jiangxi Province. It is made step by step from rice: soaking, milling, boiling, pan-frying, kneading and steaming. It takes its name from its shape, which resembles an old oil lamp bowl.
The snack dates back to the Jiajing reign of the Ming Dynasty, with a history of more than 400 years. Today it is a household favourite across Yanshan. Glutinous Rice Cake (Nuomizigao)
In Jiangxi, glutinous rice cake is a daily nutritious staple for every family and a popular festive gift. The Chinese character zi here means pastry.
Raw chicken or duck eggs, diced fatty and lean pork (streaky pork) and mild seasonings are mixed thoroughly with glutinous rice. The proportions are precisely controlled so that the stickiness of glutinous rice, the rich aroma of egg yolk and the savoury taste of pork balance perfectly — none can overpower the others.
