Delicious Food in Fu’an
Golden Crispy Burger (Jinsi Hamburger)
This is arguably the most distinctive local snack in Fu’an. Split a sesame flatbread into two halves, then stuff braised pork and shredded bean sprouts in between. The taste is absolutely wonderful!
There is another popular version with fried cakes sandwiched inside, which is equally tasty. Different from fried cakes elsewhere, the ones in eastern Fujian are filled mainly with dried shredded radish, minced meat and green onions, releasing an appetizing radish fragrance after deep-frying.
Fu’an Tofu Pudding
As summer arrives, tofu pudding reappears on streets all over the city. Its sweet, silky aroma always attracts crowds of locals grabbing breakfast outdoors.
Street vendors sit on low stools with specially made wooden barrels right in front of them. Wooden barrels keep the pudding warm while adding a delicate natural fragrance.
When customers come, the vendor lifts the wooden lid and scoops the tender tofu pudding piece by piece into bowls, each portion looking like a blooming white lotus. Then one or two spoonfuls of brown sugar ginger syrup are poured over the top, which makes this snack uniquely Fu’an-style.
Served in this way, the bright, sweet and smooth tofu pudding is so tempting that lovers of this treat cannot wait to finish it.
Jiguang Cake
Originally an ordinary local flatbread, it got its name after Qi Jiguang, the national hero fighting Japanese pirates in the Ming Dynasty, adopted it as staple food for his troops. People in Fu’an still keep this traditional name today.
Bakeries are scattered along downtown streets, including many family-run old shops passed down for generations. The cake is made only with flour, edible alkali and salt. It is a genuine healthy snack popular among people of all ages.
Fu’an Beef Balls
They are nothing like the beef balls shown in movies, yet incredibly delicious.
Fresh beef is minced and mixed with a little alkali. The meat paste is placed on a wooden board. When the water is simmering, small slivers of meat are scraped into the pot with bamboo chips or spoons. Season with chili, salt and monosodium glutamate and bring to a boil.
The finished beef balls are spicy and savory with chewy beef texture.
Oyster Stuffed Fritters
The combination of oyster fritters and sesame flatbread is one of the most famous snacks in Fu’an. Shaped like a sandwich, it has many local nicknames such as “oyster cake” or “stuffed flatbread”. Locals simply call it “dibao”.
Muyang Wonton
Anyone visiting Muyang in western Fu’an must try this unique snack from the She ethnic area.
Also known as biantou, Muyang wontons became famous as early as the 1930s. They are well-loved far and wide for ultra-thin wrappers, fresh color, rich fragrance, plump fillings and tender juicy texture.
Fermented Rice Wine Poached Duck Eggs
Bring fermented rice wine and water to a boil. Beat Muscovy duck eggs continuously, then pour the egg mixture into the boiling liquid while stirring rapidly for one minute. Add white sugar to finish.
It carries rich aromas of wine lees and duck eggs with a one-of-a-kind flavor. Best enjoyed piping hot, it makes a perfect midnight snack or dessert.
