Shuozhou Local Cuisine
1. Shanyin Frontier Frozen Rabbit Meat
The frontier frozen rabbit meat features tender flesh, delicious taste and rich nutrients, with a digestibility rate of 80% to 90%, winning great popularity among diners.
Rabbit meat contains a remarkably high level of protein: twice as much as pork and mutton, one-third more than chicken, and one-sixth higher than beef which is also rich in protein. Meanwhile, it is very low in fat — only 1/16 of pork, 1/7 of mutton and 1/5 of beef. It is an ideal choice for people who want to avoid gaining weight. It is especially recommended for elderly people suffering from hypertension and diabetes. Rich in lecithin, rabbit meat can emulsify fat for better bodily absorption and reduce the risk of arteriosclerosis. In Japan, it is known as the beauty meat.
2. Yingxian Cold Jelly
Made from potato starch, Yingxian cold jelly is a distinctive local snack. In summer, stalls selling cold jelly can be found all over streets and alleys.
This delicacy enjoys great popularity for its unique flavor. Firstly, it has a high water content, with a starch-to-water weight ratio of approximately 1:10, and is kept soaked in cold water until sold. Secondly, it goes through elaborate processing. Thirdly, it is perfectly seasoned with salt, soy sauce, chili, vinegar, sesame oil, monosodium glutamate, mustard and scallions. Shredded dried tofu is added as a side ingredient, making it a treat with excellent color, aroma and taste.
3. Huairen Yellow Millet Cake
Yellow millet cake is a staple homemade food popular around Huairen. It is characterized by its golden color, soft texture, chewiness and inviting aroma, delivering a wonderfully palatable taste.
Cooking Method: Use yellow millet flour as the main ingredient. Mix the flour with warm water into crumbly lumps, then steam them in a bamboo steamer. Transfer the steamed mixture into a basin and knead thoroughly by hand. Brush a little oil on the surface while kneading to prevent the cake from drying and cracking.
