Sun-Vinegar
Chishui Sun-Vinegar is brewed following age-old traditional techniques. Natural acetic bacteria are cultivated via solid-state fermentation. Both the vinegar mash and finished product are exposed to sunlight throughout the process, hence the name "Sun-Vinegar".
It is mainly made from wheat bran together with dozens of Chinese herbal medicines. The vinegar generally matures after one hot season, and those aged for two to three hot seasons deliver the finest flavor. Presenting a reddish-brown color, Chishui Sun-Vinegar features a rich aroma, mild sourness and a subtle sweet aftertaste. It tastes smooth without astringency, resists mildew and boasts a mellow, concentrated flavor.
Dried Sliced Bamboo Shoots
Made from winter shoots of moso bamboo through elaborate roasting, Chishui dried sliced bamboo shoots resemble magnolia petals in shape and have a golden yellow hue. As a precious traditional local delicacy, it can be served alone or cooked with other ingredients. Whether pan-fried, braised, stir-fried, quick-fried or stewed, it always tastes fresh, tender and crisp.
Insect Tea
Also known officially as pearl tea, insect tea is a rare premium specialty of Chishui with limited output and a high price.
Local people pick tender leaves of wild white tea and process them for natural fermentation. The fermented leaves attract larvae of the Platyja umminia moth. After feeding on the leaves, the larvae excrete tiny droppings smaller than tea-oil seeds. These droppings are collected and sun-dried to make the fragrant Chishui insect tea.
Rich in organic acids, vitamins, amino acids and alkaloids, the tea has a pleasant, refreshing taste that invigorates the mind and sharpens eyesight. It is believed to refresh the spirit, clear internal heat, nourish the stomach and invigorate the spleen, regulate qi, relieve exterior symptoms, lower blood pressure and aid digestion.
