Eight Must-Try Dishes in Jiangmen

Enping Rice Noodles (Laifen)

Laifen is a unique local delicacy native to Enping, made purely from rice flour. During the Mid-Autumn Festival, households in northern Enping serve laifen as the staple food.
To prepare it, blanch the noodles in boiling water and pour in rich broth, creating an exclusive flavorful bowl of laifen. Adding rock sugar and rice liquor to the noodles brings another distinctive taste.

Enping Wild Vegetable Feast

Iconic homestyle dishes of Enping include deep-fried small river fish with fermented black beans, thorn vegetable soup, stone frog clay pot rice, free-range chicken and more. These dishes use simple ingredients yet deliver exquisite flavors.
The tiny fish live in mountain streams deep in Enping’s hills. Uniquely, they stop growing once they reach the length of an index finger. Nurtured by clear mountain spring water, they carry outstanding natural sweetness. Deep-fried small fish pair perfectly with plain congee or rice for an aromatic, delicious meal.

Jiangmen Dried Tangerine Peel Feast

Local residents of Jiangmen have long used dried tangerine peel as a cooking ingredient. Valued for its distinctive aromatic fragrance and medicinal benefits, it is used to prepare classic dishes such as tangerine peel duck soup, dried fish braised with tangerine peel, and spareribs stewed with tangerine peel, leaving a lingering delightful aftertaste.

Its origin dates back to the late Southern Song Dynasty. Legend has it that an imperial chef fled to the Yinzhou Lake area of Xinhui and opened a roast goose shop, making a living with his secret royal roasting technique. Kaiping Dog Meat

Dog meat is widely enjoyed across Jiangmen, especially among Kaiping locals. The finest dog meat comes from Zhenhua, Longtang and Lougang.
Zhenhua-style dog meat preserves its original natural taste. In Chikan and surrounding towns, dog meat is steamed together with deep-fried dried bean curd sticks and black beans for richer flavor.

Yellow Sand Clams

Yellow sand clams are a rare delicacy with limited annual output. They feature plump, tender white crisp meat and an intense authentic clam umami flavor.

Duruan large-top bitter melon has been cultivated in the Duruan area for over a hundred years. The region’s sandy soil creates ideal growing conditions, producing superior bitter melons unmatched by those from other places.
