Great care is taken in bean selection and production techniques. Made from local soybeans, it undergoes a series of procedures including soaking, grinding, filtering, boiling, refining, curdling and shaping.
Dujie Sour Pork
Sour pork is a traditional craft mastered by every household in the mountainous area of Dujie Township since ancient times.
Roast the pork belly skin until golden brown, then steam corn kernels thoroughly. Add 60 to 70 grams of fine refined salt per kilogram of pork. Mix the three ingredients thoroughly and knead repeatedly until soft. Pack the mixture tightly into a porcelain jar and seal it airtight. After one month of pickling, the sour pork is ready to eat.
Dujie Chili Peppers
Dujie Township lies in the rocky mountain area. Local income mainly comes from farming, breeding and migrant labour. Major crops include corn, rice, soybeans, chili peppers and pearl sorghum.
In particular, bird’s eye chili cultivation has become a pillar industry here.
The annual planting area exceeds 9,000 mu, with an output of 3,000 tons and an output value of 12 million yuan.
