Well-shaped branches without malformed horns or damage; full and plump tips; intact processing with no broken skin, no rancidity, peculiar odors or insect infestation.
Round or sub-round slices 1 to 1.5 millimeters thick. The outer skin is reddish-brown or brown; the cut surface is off-white or light brown with fine honeycomb pores in the center. The outer edge has little or no bony tissue and appears coarse. The texture is hard and brittle, carrying a mellow, slightly fishy aroma with a sweet and lightly salty taste.
