The biggest feature of cheese products of Nai Lao Wei is that milky aroma is wreathed with light wine aroma, and delicate and tender cheese tastes mellow and sweet. Embedded with a few seed kernels, raisins and golden cake crumbs on each bowl of cheese, the cheese tastes smooth and chewy. There was a poem describing the cheese of Nai Lao Wei—"Fresh and tasty cheese in Beijing can compete with white skin of a beautiful woman. After drinking it, one does not feel thirsty and it tastes smooth." The founder of Nai Lao Wei is Wei Hongchen. It is said that after he stole the technique of making cheese from royal chefs, he started to sell cheese at the entrance of theatres in Dashilar. In 1888, Wei Hongchen rented a shop at No.15Menkuang Hutong, Qianmenwai Street, Beijing, and founded "Linji Cheese Shop", which was specialized in selling cheese. In 1988, Wei's Cheese Shop changed its name to "Nai Lao Wei ".
