Overview of Dongying Cuisine
Dongying sits at the Yellow River Estuary on the shore of the Bohai Sea, where the Jiaodong Peninsula meets inland Shandong. Endowed with rivers, lakes, sea areas, mountains and forests, the region boasts abundant natural resources and a wide variety of cooking ingredients. After the founding of the People’s Republic of China, the development of Shengli Oilfield brought a large influx of migrants from all over the country, blending culinary styles from across China into Dongying’s local food culture.
Signature Delicacy: Yellow River Knife Fish
The Yellow River Estuary is the native habitat of the Yellow River knife fish, which gets its name from its sharp blade-like shape. Its formal scientific name is Coilia nasus, and locals around the estuary also call it "back-swimming fish". Throughout history, the Yellow River has shifted its course many times, yet the knife fish have consistently migrated down to the sea and swum back upstream every year. Though knife fish can also be found at the Yangtze River Estuary and Haihe River Estuary, they are neither as abundant nor as flavorful as those from the Yellow River.
