1. Dongpo Shui Jiao (Steamed Rice Dumplings)

Dongpo Shui Jiao is the most distinctive and renowned signature snack of Lianzhou. Its wrapper is soft, crisp, smooth and tender with a fresh, clean taste, while the minced pork filling strikes a perfect balance of saltiness and sweetness, rich and mellow in flavour. The dish blends the spicy culinary style of southern Chu and the mild, elegant taste of Lingnan, integrating the food cultures of Lingnan and the Central Plains. Completely handmade, this all-natural green healthy snack is absolutely worth trying!
The wrappers are made from a blend of raw and cooked batter of premium non-glutinous rice. They are stuffed with water chestnuts, chopped green onions and lean pork, folded into triangular shapes and steamed in bamboo baskets. Dip them in sesame oil and soy sauce for a sweet, refreshing bite.

2. Flowering Chinese Cabbage Stir-Fried with Dongpo Cured Pork

This is the most classic dish in the flowering Chinese cabbage feast. Unlike many new dishes created for cabbage festivals, it is an age-old, homely favourite beloved by countless locals in Lianzhou.
Select streaky pork from Dongpo cured meats and stir-fry it to render out the lard. Toss in fresh flowering Chinese cabbage while the wok is piping hot, and stir-fry until fully cooked before serving.
Though the cooking steps look simple, the flavour is extraordinary. The rich fatty aroma of cured pork complements the cabbage perfectly. The stir-fried cabbage tastes fragrant, smooth and savoury with a pleasant lingering sweetness and the unique umami of cured meat, unmatched by cooking oils of any other kind.

3. Braised Snake Segments

Cut snake meat into segments, simmer over high heat with secret homemade sauce and assorted seasonings. The finished snake segments are wonderfully chewy, aromatic and tasty, coated in thick glossy gravy that leaves an unforgettable flavour.

4. Spiced Braised Beef Hooves

Lianzhou sits at the junction of Hunan and Guangdong provinces, so its food culture combines the characteristics of Guangdong, Hunan and Guangxi cuisines, featuring both sour and spicy flavours with diverse cooking methods including braising, stir-frying, stewing and casserole cooking. Among all local dishes, braised beef hooves stand out as a signature specialty. Nutrient-dense beef hooves are an excellent therapeutic dietary ingredient with multiple health benefits for the human body; beef tendons help boost the development of ligaments and bones.

5. Stuffed Shantang Tofu

Shantang Tofu boasts an exceptionally silky, tender and fresh flavour, thanks not only to sophisticated traditional processing techniques but also to the superior local spring water. It is widely acknowledged that regions famous for natural spring water always produce exquisite tofu.
Tofu dishes are a must-serve treat for any guest visiting Shantang. Simmer plain soft tofu with red dates and green onions for a light, refreshing soup. Slice the tofu, pan-fry gently until golden brown on both sides, and serve with garlic soy sauce for a combination of fragrant, sweet, crisp and silky textures all in one bite.
