Braised & Tied Pork Trotters
Foshan braised and tied pork trotters have two styles. The first is made by slow-simmering a whole pork trotter. The second preparation requires slitting the pork trotter skin, removing tendons and bones, then wrapping layers of pork fat and lean meat inside the skin before simmering. The Chinese character "yun" means simmering and soaking over gentle heat. Since the stuffed version is bound with water grass during braising, it gets the name "tied trotters".
