Local Specialties of Baiyangdian Lake
Baiyangdian Salted Duck Eggs
Ducks raised freely in the wild around Baiyangdian produce eggs with naturally red yolks. However, the number of free-range ducks has declined in recent years due to public concerns over Sudan-tainted duck eggs.
Baiyangdian Smoked Fish
A distinctive aquatic delicacy featuring strong water-town flavors, its unique taste comes from elaborate traditional processing steps and special seasonings. Smoked fish here are categorized mainly by size. Large varieties include smoked bream and silver carp. For big common carp, the fish will be split in half to ensure thorough smoking. Small smoked fish mostly refer to smoked white croaker. Tasty and easy to carry, smoked fish are hugely popular among tourists.
Baiyangdian Lotus Seeds
Two types are available: red lotus seeds and white lotus seeds.
Baiyangdian Lotus Leaf Tea
It falls into three categories: lotus leaf bud tea, lotus leaf tea and lotus stamen tea, each with a distinct flavor and well worth a try.
Baiyangdian Preserved Eggs
Famous for bright color, delicious taste and clear tea-brown patterns on the egg white. When cut open, the pine-flower-like patterns show four layers in dark green, black, light brown and dark brown. They can be used to make cold dishes, preserved egg with tofu, preserved egg porridge and other delicacies.
Baiyangdian Wild Ducks
Though sold under the name of wild ducks, most are actually farm-raised. True wild ducks living in the lake are protected species in the Baiyangdian Wetland, and hunting them is strictly prohibited.
Baiyangdian River Crabs
These freshwater crabs are not particularly big in size but boast an authentic, savory flavor. They are plumpest from August to September every year. Thanks to the fertile, well-oxygenated water, long sunshine hours and abundant aquatic algae, all local aquatic products enjoy superior quality.
Baiyangdian Soft-shelled Turtles
The local soft-shelled turtles have tender, flavorful meat and high nutritional value. They can be cooked in various ways, such as steamed soft-shelled turtle, stir-fried soft-shelled turtle, turtle soup and braised soft-shelled turtle.
Baiyangdian Lotus Roots
Renowned for their clean appearance, fine texture, crisp and sweet taste with no residue when eaten. A cross-section reveals one large central hole surrounded by six smaller ones, and the slices will not discolor even after one day of storage.
Baiyangdian is home to many more local specialties, yet some have become rare or nearly extinct. Euryale seeds, old water caltrops and white water spinach can still be found here, but in extremely limited quantities. Such products are truly precious due to their scarcity.
