Laba Beans
Chairman Mao avoided rare delicacies and seafood, preferring Hunan’s cured fish, cured meat, and Laba beans, plus coarse grains like brown rice and soybeans mixed into rice. He said, “Coarse grains are good for health.”
Recipe:
Clean soybeans, remove empty skins, soak in cold water until swollen.
Drain, add water (1 inch above beans), bring to a boil, then simmer until mushy.
Drain beans (reserve cooking water with salt), spread to cool, place in a cloth bag, and keep warm with straw at ~20°C for 2–3 days until fermented and warm.
Spread to cool, transfer to a pot, add reserved cooking water, 50g salt per 500g beans, 6g Sichuan peppercorns, 6g chili powder, and ginger (optional). Mix well, adding salt or wine if needed.
