Loach Tunneling into Tofu
Both loach and tofu are highly nutritious. Loach, known as “ginseng of the water”, is rich in protein, fat, calcium, phosphorus, and vitamins—exceeding most fish—with tender, sweet flesh and medicinal benefits (warm qi, detox, relieve hemorrhoids). Tofu is a nourishing staple. Together, they create a nutritious and therapeutic dish.
- Keep small loaches in water with egg white to purge impurities and clean.
- In a clay pot, bring pork rib soup to a simmer. Add a whole block of soft tofu and the loaches.
- Cover and simmer gently. The loaches, escaping the heat, burrow into the tofu. When the soup boils, they die inside.
- Simmer on low heat with seasonings.
Result: Clear soup, beautiful presentation, tender and delicious—a true classic.
