Traditional White-liquor-brewing Techniques of Niulanshan Erguotou

The White-liquor-brewing industry in Niulanshan Town was already developed to a higher level 300 years ago. There were four shops producing Shaoguo (Erguotou) in Niulanshan region from 1840 to 1928, which were delivered to Shanxi, Shandong, Henan, Mongolia and Tianjin. In 1952, Niulanshan Distillery Factory specialized in the production of Erguotou and founded its own factory based on the four Shaoguo shops called Fushuncheng, Kuisheng, Yixin and Gongli. Niulanshan Erguotou has its own unique traditional liquor-brewing techniques including the understanding and control of raw materials, water source, ferment technique and liquor-blending technique, which have been passed on from generation to generation in the form of master and apprentice, ensuring the flavor features and excellent quality of Niulanshan Erguotou.
