You Yi Shun is a halal restaurant set up on August 8, 1948 by Di Deshan. It is a branch of Dong Lai Shun. There are two halal restaurants in Beijing, Dong Lai Shun and Xi Lai Shun, according to a couplet written by a man of letters. In Beijing, theinstant boiled mutton in Dong Lai Shun is the best, known as the East Style, while the fried mutton in Xi Lai Shun is unique, known as the West Style. You Yi Shun combines the strengths of the two and has developed its own style. It inherits the culinary techniques of the East Style, such as braising, roasting,instant boiling, and stir-frying,thedelicate flavor of West Style, and thefamous snacks from other places as well. You Yi Shun's featured dishes are well-known both at home and abroad. The representative ones include sautéed slicedpork, eggs and black fungus with vinegar, sautéed sliced pork, fried sheep's tail, Sweet stir-fried mutton, crouching-tiger-shaped cakes, etc. There are many restaurants with the names containing "Shun", and You Yi Shun definitely deserves the praise of Lao She, a famous writer in modern China, who praised it as delicious and satisfying all diners.
