Haikou cuisine is similar to Guangdong cuisine to some extent, while it features using coconut milk as main seasoning. The four most famous dishes of Haikou: Jiaji Duck, Dongshan Lamb, Wenchang Chicken and Hele Crab will be a feast for you.

Jiaji Duck is abundant in Jiaji town of Qionghai City in Hainan Province. It is said this variety of duck was the improved type that introduced into Hainan Province from Malaysia 300 years ago. The duck was first cultivated in Jiaji town, then spreaded throughout the province. This kind of duck is featured by the fat meat, which tastes quite fantastic. There are various cooking methods of the duck, yet the most famous one would be the steamed sliced duck, which maintains the original tastes and flavor. Roast duck is flavorful, but it is not the actual taste of the duck.

Dongshan lamb deserves any compliment. The soup and insides are mixed with rice to make congee. It's recommended to be cooked together with a local favorite dish--Watermelon peelings. Delicate lamb, which only lives somewhere near the crater in Ma'an Mountain, is prepared in various flavors: boiled, dried, steamed and salted. It's strongly recommended that you go to the crater to have the dish. Liwan Rotisserie would be the best place.

Tourists can enjoy genuine Hainan Cuisine at reasonable price in Night Market and Seafood Street. The dishes of Dongjiao Coconut Plantation Seafood Town and Fule Restaurant are more delicate and the price is higher.

Fule Restaurant

Being a chain restaurant, altogether there are four Fule restaurants in Hainan. The food provided in the restaurant is really fantastic. Besides the local style delicacies, Haikou gathers all kinds of Chinese cuisines, including Cantonese cuisine, Chongqing cuisine and Sichuan cuisine and so on.

The most famous dish in the restaurant would be the "Quan Jia Fu (meaning 'the happy family')". The dish is a combination of several kinds of seafood, which tastes quite fresh and delicious. Besides, Dongshan Mutton, one of the four most famous dishes of Hainan is also served in the restaurant.
